摘要：
A polygalacturonase activity has been detected in several yeast strains : saccharomyces cerevisiae and S. bayanus. This activity has been quantified for S. cerevisiae. A pectin methylesterase was detected in Hanseniaspora valbyensis, Pichia membranaefaciens, P. fermentans, Brettanomyces lambicus and Dekkera anomala.
