MULTIPLE-PHASE EMULSIONS USING MICROBIAL EMULSIFIERS

Bioemulsifiers were isolated from a bacterial strain Corynebacterium Sp. PPS-II grown in mineral salts medium supplemented with aliphatic hydrocarbons. The lipid extract had hydrophobic properties and the polysaccharide polymer was hydrophilic. These emulsifiers were used to prepare multiple-phase W/O/W emulsions adopting the two-step emulsification procedure of Matsumoto et al. J. Colloid Interface Sci. 57, 353 (1976). The percentage formation of the multiple emulsion was found to be a function of the concentrations of the two emulsifiers, the phase volume Φw/o/w, and the spreading tension of water on the oil phase. Very low concentrations of the lipid extract (about 0.10% w/v) gave excellent percentage formation of the multiple emulsion (about 90%). Emulsion stability ranged from a few hours to several days. © 1979.
