摘要
Horseradish peroxidase-mediated metabolism of carcinogenic 1-phenylazo-2-hydroxynaphthalene (Sudan I) leads to formation of metabolite(s) binding to macromolecules (DNA, tRNA, peroxidase itself) in vitro. The oxidation of Sudan I is a pH-dependent reaction. Not only the amount of Sudan I converted is pH-dependent, but also a different pattern of products is formed. Ascorbate and glutathione inhibit the conversion of Sudan I as well as the binding of metabolite(s) to the peroxidase molecule. The results are discussed from point of view of the metabolism of xenobiotics in plants, which either leads to damages of the plant itself of increases the risk of toxic metabolites entering the trophic chains.
