摘要
60 samples of butter from different Italian Regions have been tested to evaluate the level of contamination by coliforms and Escherichia coli. Results generally showed satisfactory hygienic conditions of butters. In the present work the Authors propose the microbiological limits For pasteurized butter ''quality butter'' and ordinary butter, after review in the Italian and E.C. laws.
