In order to identify the animal species in marinated and heat-treated marinated meat of bovine (Bos taurus forma domestica), pork (Equus przewalskii f. caballus), turkey (Meleagris gallopavo f. domestica), roe deer (Capreolus capreolus capreolus), stag (Cervus elaphus hippelaphus), springbok (Antidorcas marsupialis), and hare (Lepus europaeus), isoelectric focusing followed by silver staining was applied. All samples were marinated under standard conditions. Some samples were also further heat treated (45 minutes and 96-degrees-C). In several trials these animal species could not be differentiated; neither in the marinated nor in the heat-treated marinated meat samples species-specific protein bands could be ascertained. By making meat mixtures of two species each (0%, 20%, 40%, 60%, 80%, and 100% parts) protein bands showing an increase of decrease of their intensity could be seen. However, also with this method, a definite differentiation turned out to be impossible. Nevertheless it is of great importance to dispose of reliable methods for the verification of animal species declaration of marinated and heat-treated marinated meat. Therefore, in consequence to this study, new methods have to be developped.
