摘要
alpha-amylase was produced by Aspergillus niger utilizing fruit waste in a solid state fermentation (SSF). The effect of varying particle size, extraction pH, incubation pH, incubation temperature, activity temperature, incubation period, moisture content, peptone and yeast extract content on the production of alpha-amylase was investigated. The maximum activity of alpha-amylase (21.87IU/min) was recorded after 48 hours of SSF at pH 6 and 25 degrees C temperature of the optimum fruit waste medium. The enzyme produced by Aspergillus niger can be used in industrial processes after characterization.
