In the present study the information of the visual grading scores about the main tissue components of beef carcass was tested. A sample of young bulls of the breeds "Fleckvieh" (170) and "Schwarzbunte" (101) was used for those purposes. The results show that the visual grading scores give only little information about the lean and fat content of beef carcasses. A higher correlation coefficient is found, however, between the fleshiness score and the bone content. An accurate prediction of the tissue portions, even by the means of multiple regression analysis, is not possible when using combinations only of the grading criteria.
