DETERMINATION OF THE EFFECT OF MOISTURE ON GLIADIN GLASS-TRANSITION USING MECHANICAL SPECTROMETRY AND DIFFERENTIAL SCANNING CALORIMETRY

摘要
Gliadin showed a glass to rubber transition typical of an amorphous polymer. Mechanical spectrometry and differential scanning calorimetry were used to determine the glass transition temperature (T(g)) in the moisture range of 6.2-27.2 % (wet basis, wb) and bone dry to 16.6 % (wb), respectively. The T(g) obtained with both of these techniques could be superimposed. The T(g) could be successfully predicted using the Gordon-Taylor equation.
