OBSERVATION OF HYDROXYL PROTONS OF SUCROSE IN AQUEOUS-SOLUTION - NO EVIDENCE FOR PERSISTENT INTRAMOLECULAR HYDROGEN-BONDS

We have measured temperature coefficients of the chemical shifts, scalar coupling constants, and exchange rates for the hydroxyl protons in sucrose in mixtures of water and acetone. The values measured are virtually the same for all the hydroxyl protons in sucrose. These observations indicate that there are no persistent hydrogen bonds in sucrose in aqueous solution.
