摘要
The effects of hydrophilicity, i. e. , glycosylation of free amino groups with maltose and beta -cyclodextrin substituents, on the surface activity of beta -lactoglobulin ( beta LG) at various pH values were studied. From the changes in surface tension, the rates of adsorption and rearrangement and area cleared per molecule were estimated.
