摘要
The ability of alpha-galactosidases of the micromycete Cephalosporium acremonium, green coffee beans, and sweet almond fruits to split off alpha-1,6-, alpha-1,4-, and alpha-1,3-bonded galactose residues of simple and complex natural substrates (melibiose, raffinose, trihexocide ceramide, Gal-alpha-1,3Gal,Gal-alpha-1,3(Fuc-alpha-1,2)Gal, group-specific glycoprotein B) was studied. All three enzymes investigated split off both alpha-1,3-, alpha-1,4-, and alpha-1,6-bonded galactose residues from substrates with a linear structure; however, only the alpha-galactosidase of green coffee beans acted on branched trisaccharide. The sensitivity of the alpha-galactosidases to the presence of branching of the carbon chain was demonstrated for the first time.
