The study of dielectric relaxation in aqueous carbohydrates solutions using time domain reflectometry technique

Complex permittivity spectra of aqueous solutions of monosaccharide (d-glucose) and disaccharides (d-sucrose) in the frequency range from 10 MHz to 30 GHz at various concentrations and temperatures have been determined using time domain reflectometry technique. The complex dielectric permittivity spectrum of d-glucose and d-sucrose in water shows Cole–Davidson type behaviour. Dielectric constant (ε0) and relaxation time (τ), Kirkwood correlation factor, activation enthalpy and entropy parameters have been determined.
