ESSENTIAL AND NONESSENTIAL ELEMENT LEVELS IN YOGURT AND AYRAN WITH INDUCTIVELY COUPLED PLASMA MASS SPECTROMETRY (ICP/MS)

摘要
Heavy metals are environmental pollutants that have serious harmful effects on human health. Yogurt and ayran samples of different brands used in this study were obtained from Afyonkarahisar provinces. They analyzed districts between February and June 2019 and a total of 80 samples (40 yogurt and 40 ayran) with the ICP-MS. In the study, maximum values of aluminum (Al), chromium (Cr). iron (Fe), nickel (Ni), copper (Cu), zinc (Zn), arsenic (As), and lead (Pb) were determined 3.17, 0.01. 3.71, 0.07. 0.22. 5.04, 0.01 and 0.05 mg/kg in yogurt; 0.21. 0.03. 2.04. 0.02, 0.04, 2.96, 0.07 and 0.04 mg/kg in ayran respectively. The Co and Cd level was found below the detection limit in all samples. As a result. heavy metals are important in dairy products. For this reason, it is recommended that metal migration to the products should be prevented at all stages from milk supply, processing to dairy products and consumption, to prevent contamination of dairy animal feed, pay attention to the tools and equipment used, and regular periodic controls of the products.
