摘要
Development of mathematical models of unit operations, data basis of physical, chemical and biological properties, data bases of costs of unit operations, raw materials and products, together with mathematical methods for coupled evaluation of material and energy balances have led to professional software for a reliable process design and development of new processes in food industry. It is of great importance if such software enables prediction of the process impact on the environment. Application of software enables the analysis and process synthesis and process optimisation in view of various important objectives, such as: maximum process efficiency, minimisation of process impact on the environment, development of a sustainable technology, optimal financial planning, and overall optimisation of costs and profits from the new production. In this work the application of the computer software SuperProDesigner for the design of an integrated process of a dairy is presented. The alternatives in process synthesis are studied, material and energy balances are determined, and the process impact on the environment is estimated. Based on the alternatives in process synthesis, an optimal design can be proposed.
