Monomodal oil-water (O/W). emulsions with two different droplet sizes (<(x)over bar 50,3> = 1 mu m, <(x)over bar 50,3> = 25 mu n) were produced. The droplet sizes of these emulsions were determined using the laser light diffraction in combination with the Mie theory. The examination of the shear stress tau and the shear viscosity eta in dependence of the shear rate gamma shows differences in the rheological behaviour of the emulsions depending on the volume concentration df the disperse phase and its droplet size.
