Nitrates and nitrites in salad samples

摘要
From November 1996 to October 1997 25 salad samples have been analyzed searching for nitrates and nitrites. Nitrates presence varies from practical absence(1 sample) up to 2,600 mg/kg, nitrites until 13.7 mg/kg, but the quantity is in general negligible. There is not any significant variation of nitrites presence in time.
