Physical properties of emulsified films based on chitosan and oleic acid

Film-forming emulsions were formulated with chitosan (CH (gL(-1)): 7, 10, 15), oleic acid (OA (gL(-1)): 0, 3, 6) and glycerol as plasticizer (10gL(-1)). The films were characterized on their physical properties (colour, water solubility, water vapour permeability and oxygen permeability (PO2)), in order to gain a better understanding of the functional properties of chitosan-lipid films. The incorporation of OA limited water vapour transfer in films obtained with 15gL(-1) CH, likely because the viscosity of the film-forming dispersion was high enough ((0)=2.07Pas) to ensure the emulsion stabilization during the drying film process. The incorporation of OA did not generate significant (p>0.05) differences of the PO2 values in the CH films; besides, they showed a slight yellow-green colour. The results of this study provide further evidence to promote the chitosan-lipid films to be used as biodegradable food packaging. Se formularon peliculas con quitosano (CH (gL(-1)): 7, 10, 15), acido oleico (OA (gL(-1)): 0, 3, 6) y glicerol como plastificante (10gL(-1)), las cuales fueron caracterizadas en sus propiedades fisicas (color, solubilidad en agua, permeabilidad al vapor de agua y permeabilidad al oxigeno (PO2)), con la finalidad de ampliar los conocimientos acerca de la funcionalidad de este tipo de peliculas. La incorporacion de OA limito la transferencia de vapor de agua en las peliculas elaboradas con 15gL(-1) CH, probablemente por la viscosidad de sus dispersiones ((0)=2,07Pas) que promovieron la estabilizacion de la emulsion durante el secado de la pelicula. La incorporacion de OA no genero cambios significativos (p>0,05) en los valores de PO2 de las peliculas y estas mostraron una ligera coloracion amarilla-verde. Los resultados proveen evidencias adicionales para promover el uso de peliculas a base de quitosano-lipidos como materiales biodegradables en alimentos.
