The prediction of red wine quality on the basis of the correlation between the saccharides and the anthocians content from grapes

摘要
In this paper is proposed a method used to predict the quality of a red wine based on the correlation between the saccharates and anthocyans contents in grapes from which the wine is obtained. For this purpose it was determined the anthocyans content from black grapes of three varieties: Cabernet-Sauvignon, Merlot and Novac, and data was analysed in relation with the ones concerning the saccharates concentration of the same grapes. The study was made during 1996-2000 in the wine chemistry lab of the Station for Wine Research and Development of Dragasani, Valcea. This method may provide information concerning wine categories with original, denomination which many be produced in different crop years.
