Determination of beer color using image analysis

摘要
An image analysis method was developed to determine beer color on the basis of the European Brewery Convention (EBC) colorimetry. Saturation. a feature of the image analysis method, showed a positive correlation with EBC color (r > 0.998). A model was built to measure beer color in the image analysis method. Seventy-six beer samples differing in location of production, categories of beers, strength of wort, alcohol content, and storage time (within and outside of shelf life) were evaluated to assess the performance of the image analysis method. It was found that colors determined by using image analysis had a high positive correlation with those determined by using spectrophotometry and colorimetry. This study has shown that it is feasible to determine beer color using image analysis. The image analysis method was highly repeatable with a standard deviation of zero.
