Optimization of Enzymatic Hydrolysis Conditions of Rapeseed Protein by RSM and Optimization of Regression Model

摘要
Response Surface Methodology (RSM) consists of a series of mathematic and statistical methods, and can be used to determine the effect of factors and their interactions to dependent variables during processing. Established mathematical model can be used to express the relationship between response values and factors exactly and to predict experimental value under different process conditions. On the basis of single factor test, RSM was used to optimize the enzymatic hydrolysis conditions of rapeseed protein. The optimum conditions were: 55.5 degrees C, pH6.2, E/S 74.3LAPU/g, substrate concentration 12.0 %, time 3h. The predict degree of hydrolysis of rapeseed protein under these conditions was 26.38%. According to the investigation of variance analysis results, the influence significance of factors to response can be sure, regression equation can be optimized, and controlled conditions can be simplified.
