Activity of free Candida rugosa lipase in hydrolysis reaction of tuna oil under high pressure carbon dioxide

摘要
Activity of free Candida ragosa lipase (CRL) in hydrolysis reaction of tuna oil was reduced significantly under high pressure carbon dioxide (CO2). A lot of factors, such as water content, pressure, temperature, pH, phase behavior and the kind of atmospheric gas affect the activity of CRL in the hydrolysis reaction under high pressure CO2 and the effect of them was investigated. The hydrolysis activity was affected mainly by the water content, pressure and temperature. Besides, pH was not a key factor for the hydrolysis activity of CRL under high pressure CO2. The dilution effect by a great amount of CO2 dissolved in the oil phase was suggested to be the most possible cause to the reduction of hydrolysis reaction activity of CRL under high pressure CO2.
