DIETARY FIBRE FRACTIONS IN CORNELIAN CHERRY FRUIT (CORNUS MAS L.)

摘要
In the research study, the contents of dietary fibre and its fractions were compared in seven varieties of Comelian cherry fruits (Cornus mas L.) picked in 2007 and 2008. The contents of dry matter, soluble solids, pectin, neutral dietary fibre (NDF) fraction, acidic dietary fibre (ADF) fraction, and cellulose in the fruits were determined. Additionally, the contents of hemicellulose and lignins were computed, too. The analyzed varieties of cornelian cherry fruit contained different quantities of fibre and its fractions. The level of individual fractions and the content of dry matter, soluble solids, and pectins significantly depended on both the fruit variety and the harvest year. The highest content of neutral and acidic fractions of dietary fibre was found in the Florianka variety; the levels of NDF and ADF were 16.1 g/100 g d.m. and 12.2 g/100 g d.m., respectively. The lowest content of the neutral and acidic fractions was in the Bolestraszycki variety and amounted to 10.7 g/100 g dm. and 7.6 g/100 g d.m., respectively. The highest contents of lignin (8.5 g/100 g d.m.) was determined in the Florianka variety and the lowest (3.0 g/100 g dm.) in the Paczoski variety. In the comelian cherry fruits, the level of hemicellulose and cellulose ranged from 1.3 to 4.6 g/100 g d.m. and from 3.1 to 6.7 g/100 g d.m., respectively.
