Determination of phenolic compounds in red wines by reversed phase high performance liquid chromatography and electrospray ion trap mass spectrometry

摘要
A high performance liquid chromatography/electrospray ionization mass spectrometric method has been developed for the determination of phenolic compounds in red wines. This method was validated for accuracy, linearity, repeatability and limits of detection (LOD). The results show that average recoveries of 16 phenolic standards exceed 78.5% except for rutin and trans-piecid; linearity is good ( R-2 > 0. 999 the relative standard deviations of repeatability of inter-day ( n = 10) and intra-day ( n = 6) for retention time and peak area are less than 2.0% and 5.0%., respectively; LOD is 0. 05 - 1.0 mg/L. 16 phenolic compounds in 6 red wines were determined by the method established, and, the relative standard deviation ( %) for triplicate of each compound was less than 5. 0%. The method was reliable for quality control of red wine.
