Possibility of using electronic nose with metallic semiconductor sensors (MOS) for quality and shelf-life evaluation of different preserved foods

摘要
The possibility of using a model of electronic nose with semiconductor metal sensors of foods have been evaluated. The instrument resulted particularly evoluted with respect to previous models with only one sensor (Alabaster). Nevertheless many methodological problems exist, mainly related to the software managing all recorded data that don't permit the use in a routinary way. Other similar instruments, under consideration, use polymeric sensors and are equipped with artificial intelligence software able to reduce the above problem.
