Industrially produced artificial sausage casings can be manufactured from various raw materials. This publication describes the raw materials listed in Recommendation XLIV ''Artificial Casings'' as well as the market significance of the sausage casings produced by different methods. Casings manufactured from the raw material cellulose today rate as the most significant in industrial sausage-making operations. Single-layer cellulosic casings and to a particularly large degree coated and uncoated cellulose fibrous casings are produced from this material. The following article deals with the ordinary, i.e. non-coated, cellulose fibrous casings which are often referred to simply as fibrous casings. A special feature of fibrous casings described in detail is the impregnating coating appiled to their inside surface. It enables the casing to cling to the sausage surface in various degrees of adhesion, thus allowing tailored sausage production techniques as demonstrated here with salami production. The article also describes the other technological properties of fibrous casings.
