摘要
Recently, there is growing demand for alternative new heating technology, ohmic heating is an alternative and fast heating method has a large number of actual and potential application exits in food industry, water distillation, waste treatment, chemical processing etc. This paper presents a comprehensive review of ohmic heating current application, design configurations and operation parameters. The review highlights that ohmic heating are prospective alternative new heating technology to meet the demand of industrial and domestic heating utilizing. The recommendations for further research are made to provide more robust analysis in assessing ohmic heating performance. (C) 2014 Elsevier Ltd. All rights reserved.
