Antioxidant Activity of Berries, Content of some Polyphenols and their Antioxidant Activity

摘要
The aim of this study was to investigate antioxidant activity of five berry species (chokeberry, elderberry, black currant, red currant and blueberry) by using DPPH assay and to determine the content of some polyphenolic antioxidants in these berries (quercetin-3-rutinoside, quercetin, chlorogenic acid, p-coumaric acid, caffeic acid and ferulic acid) by high performance liquid chromatography (HPLC). In addition, antioxidant properties of polyphenolic compounds that were found in relatively high amounts in berries, quercetin-3-rutinoside and chlorogenic acid, were investigated by using DPPH assay. The results showed that the DPPH center dot radical scavenging activity was the highest in chokeberry and decreased in blueberry, black currant, elderberry and red currant. Berries contained high amounts of quercetin-3-rutinoside and chlorogenic acid whereas the content of other investigated polyphenols were considerably lower. Quercetin-3-rutinoside showed higher DPPH center dot antiradical activity when compared with chlorogenic acid.
