摘要
Optimum parameters of the autohydrolysis of rutin to quercetin from Sophora japonica blossoms have been established. The process has been carried out as an 8-hour maceration at pH 4.5 and 60 degrees C. The obtained quercetin content, determined by HPLC is 4.4-fold greater compared to the control sample.
