Urban challenges and solutions for ethical eating

摘要
With the move of people from rural to urban locations across the world, so that the majority now live in cities, the challenge to provide food security for all, with its emphasis on choice as well as access and nutritional satisfaction, is much greater. To do so in a way that respects environmental as well as social and economic drivers is even more difficult. Two case studies are described, one in the UK, the other in Japan, that have and are succeeding in meeting the challenges while allowing their consumers diverse and ethical food choices. There would appear to be hope that discussion, collaboration and mutual respect will afford better health through good food choice and less damage to the associated environments.
