摘要
β-Glucans and arabinoxylans are the two major non-starch polysaccharides (NSP) in barley. Based on initial differences in solubility, β-glucans and arabinoxylans can be classified into water-extractable and alkali-extractable polymers. The evidence of intermolecular interactions of the two NSP is studied.
