Stoichiometric characterization of citric acid synthesis from complex carbon-containing substrates

摘要
Results of an analysis of predicted (from stoichiometric equations) and measured stoichiometric characteristics of citric acid biosynthesis were used in studying various ratios of substrates (sucrose : ethanol). An optimal ratio was found, which resulted in the maximal yield of citric acid with minimal expenditure of oxygen. A cost-effective technology was designed for citric acid biosynthesis.
