摘要
Anthocyanin belongs to the flavonoid derivative. Anthocyanin has antioxidant and bioactive properties that are beneficial to health such as anti-diabetes, anti-inflammatory and anticancer. Anthocyanin can be obtained by extracting from rosella calyces. The stages of research that will be carried out include ultrasonic solid liquid extraction of anthocyanins from calyces of Hibiscus sabdariffa L. were studied to evaluate the influence of the operating parameters. The stages of research that will be carried out include ultrasonic aqueous extraction and drying by freeze dryer. The optimum results of the aqueous extraction was obtained at 30 degrees C and extraction time of 30 minutes. The optimization showed that the maximum anthocyanin yield can be obtained at 0.77 g/L. Based on the SEM image, the particles obtained from the results of drying the freeze dryer are flat like pieces of paper where the particle size is not uniform. The particle size of the extract powder ranges from 3-4 mu m.
