摘要
Few market studies have been undertaken of Wrens cattle meat and its development potential. Our paper highlights a situation of high demand and insufficient supply. Nearly half the volume produced is used for home consumption by the farmers, or sold through direct sales, whilst our survey shows that consumer demand and willingness to pay are strong for this product. Potential for market growth exists. To achieve this, the involvement of different actors in the market must be stimulated and strengthened. The organisation of the supply-chain at the cantonal level could fill this role.
