摘要
The process of pectin extraction from orange skin assisted by microwave has been researched by scanning electron microscopy (SEM) and atomic force microscopy (AFM). The effects of microwave radiation on organization of the orange skin and the changes on this orange skin organization during the extraction have both been analyzed. (c) 2005 Elsevier Ltd.
