Effect of added citrate and phosphate on native proteinase activity in cow and buffalo milks

摘要
Influence of added phosphate and citrate on native proteinase activity in cow and buffalo milks was investigated by estimation of proteose-peptone during incubation of milk at 37 degrees C. The proteose-peptone levels of milk, with added phosphate above 30 mM concentrations, decreased significantly (P less than or equal to 0.01) during incubation, indicating inhibitory effect of phosphate on native proteinase activity of milk. Addition of citrate above 64 mM concentration increased the activity of native proteinase significantly (P less than or equal to 0.01) in cow milk, while it did not have any significant effect on buffalo milk.
