Evaluation of Nutritional and Mineral Composition of Apricot, Peach and Nectarine Wasted Peels

摘要
The results of the determination of the nutritional and mineral composition of apricot, peach and nectarine wasted peels were presented in this work. Analyzes revealed that of the three samples tested, nectarine wasted peels were characterized by the highest content of total dietary fibre (2.70%), reducing sugars (2.08%), free fat (0.15%), Na (4.22 mg/kg), Mg (114 mg/kg), Cu (3.06 mg/kg) and Zn (1.97 mg/kg). Peach wasted peels were characterized by the highest content of digestible carbohydrates (8.6%), total sugars (7.58%), dry matter (11.6%), Al (4.44 mg/kg) and Fe (4.85 mg/kg). Apricot wasted peels were characterized by the highest crude protein content (1.36%), water content (90.2%), K (1913 mg/kg), B (4.77 mg/kg), P (315 mg/kg), S (117 mg/kg), Ca (111 mg/kg) and Mn (1.28 mg/kg). Peach wasted peels and nectarine wasted peels were characterized by the same values of crude protein (1.14%) and total ash (0.49%).
