After introducing the general techniques used to construct chiral Lagrangians with matter fields, e.g. nucleons and/or resonances, we concentrate on their usefulness to parameterize experimental data up to rather high energies. It is emphasized how to properly unitarize such Lagrangians in a scheme that respects both the chiral counting and the real parts of the unitarity loops. As practical applications we discuss Npi and NK scattering.
