摘要
Starch chemistry is a highly specialised activity which starts with a complex macromolecular chemistry to end in a more classical sucro-chemistry. Then, starting from cereal or tuber starches, it is possible to obtain about 600 differents products, finding applications in 90% of existing industries. The main characteristic of starch derivatives remains the biodegradability.
