Isolation of Beta-Glucan from Yeast and its Use as a Dietary Supplement for Low-fat Yoghurt Manufacturing

摘要
Beta-glucan is a biologically active substance with a wide range of physiological effects: it is used to lower blood cholesterol, to stimulate the health of the digestive system and immune system. Also it acts as fat replacer and stabilizer, which allows it to be used as a dietary supplement. A large amount of beta-glucan is found in yeast. In addition, yeast is a waste product of beer and wine. Our study purpose is to isolate beta-glucan from yeast Saccharomyces cerevisiae (Baker's and Brewer's Yeast) and its use as a dietary supplement in the dairy yoghurts production.
