Fish protein con centrate (FPC) is a healthy, sustainable and high nutritive product which sanitisedly produced from fishes in which, protein and other nutrients are m ore concentrated than in fresh fishes. To produce FPC-type A, physical and chemical specifications were used. In chemical process, an organic solvent (isopropanole) was used to extract water and lipid from fish in three phases and rest of protein and minerals were dried and grinded. According to our results protein rate was 91.2%. lipid: 0.5%, ash: 3.6%, moisture: 2.3%, TVN: 10 mg/100gr, peroxide: 5m eq/kg, amino acids includes; Al anin: 38.80, Argenine: 6 2.60, As partic: 73.20, Cysteine: 9.20, Glutamic: 122.40, Glysine: 34.00, Histidine: 29.40, Isolucien: 45.20. Lucien: 75.3, Lysine: 80.60, Metionine: 32.30, Phenylalanine: 69.80, Proline: 35.50, Serin: 31.70, Threonine: 43.40, Tyrosine: 30.60. Valine: 52.50 (mg/g) and fatty acids includes; Arachidic acid: 1.25, Oleic acid: 40.50. Stearic acid: 5.52. Palmitoleic acid: 27.95, Myristoleic acid: 0.28, Myristic acid: 2.94 (g/100g) were also determined. Our sample was free of bacteria and fungi. The aim of this study is to produce conservable product from fish protein concentrate for further use of ani mal protein source and change benefit from unused small fishes to a product for human consumption in different foods to increase its nutritive value and quality with no change in other specifications.
