Exopolysaccharide (EPS) production by Lactococcus lactis subsp. cremoris NIZO B40 was significantly influenced by variations in the carbohydrate type. Glucose was the most, and fructose the least suitable sugar source for EPS production. Culture conditions also affected EPS production. The optimal temperature for EPS production was similar to that for growth (30 degrees C). The highest concentration of EPS was measured at a culture pH of 5.8 although growth was optimal at pH 6.3. These results indicated that growth and EPS production are not completely linked to each other. This was confirmed by following the growth and EPS production with time. EPS production started at the mid-exponential growth phase but continued after the stationary phase was reached. Comparing glucose and fructose grown cultures of strain NIZO B40, no difference in activities of enzymes involved in synthesis of sugar nucleotides could be detected.
