摘要
In this study, we are aimed for application of shock wave to food processing. An explosive is usually used as an energy source to generate shock wave, but there are various obstacles for use of an explosive. So, we introduce shock wave generation by the metal wire explosion. Shock wave is generated by the metal wire explosion using high voltage discharge. Almost foods after processing by shock wave are shown the effects of softening and improvement of osmosis. In this time, we measured pressure generated by the each devices and the value of hardness and pH of processed food to evaluate the device. As a result, when we compared shock pressure by an explosive with that of high voltage discharge, these values approximately at the same level were measured. From comparison of the result that processed food in each device, hardness and pH together are not shown big difference. Thus, it was shown that this device with the metal wire explosion had ability for enough processing.
