摘要：

The homofermentative facultative heterofermentative Lactobacillus plantarum strains exert an inhibitory activity against moulds. Such activity is not shown during the bacterial growth, but only after long contact between the cells and the media (at least 14 days). Two moulds tested, Penicillium nalgiovense and P. gladioli, demonstrate a different sensitivity towards the inhibition. Heterofermentative Lact. brevis strains show either a very limited inhibitory activity or none at all. The antagonistic action is probably connected with the release of active compounds following cell autolysis.
