摘要
Bacillus subtilis strain isolated from Cheonggukjang was used to make fermented soymilk (FSM) The comparative analysis of unfermented soymilk (USM) and FSM was carried out by LC/MS The data from positive ion mode LC-MS profile, negative ion mode LC-MS profile and LC profile showed changes of several LC peaks The increased antimutagenic and anticancer effect of FSM were investigated by Ames test, and MTT assay, DAPI staining and RT-PCR in human HT-29 human colon carcinoma cells FSM showed the highest antimutagenicity against N-methyl-N'-nitro-N-nitrosoguanidine in Salmonella typhimurium TA 100 The inhibition effect of FSM against HT-29 human colon carcinoma cells were stronger than that of USM Furthermore, FSM induced relatively Increased ratio of apoptotic body than that of the USM It also regulated apoptosis related mRNA and protein expression The expression of Bcl-2 decreased, but the expression of Box increased by the treatment of FSM These results suggest that fermentation would increase the antimutagenic and anticancer effects of soymilk
