Free radical generation in bitter tea (Ilex latifolia) studied by EPR spectroscopy

摘要
Paramagnetic components in leaf tissue from Ilex latifolia have been studied by EPR spectroscopy along with aqueous extracts made in the presence and absence of spin traps. The spin trapping experiments show the presence of hydroxyl and C-centred radicals, whilst in the absence of spin traps the experiments show that there is complex free radical chemistry, with some radicals being very stable.
