摘要
Protein water interactions as well as cavities play a central role in the unfolding of proteins by pressure as well as temperature. Of particular interest is the structure of intermediates on the unfolding pathway that gives rise to the formation of fibrous aggregates. Proteins are the primary target in the pressure and temperature inactivation of organisms.
