(Figure Presented) Unfolding upon dehydration:. What happens to the structure of a native protein that is suddenly exposed to vacuum? Native electron capture dissociation shows that dehydration turns the strongest intramolecular interactions in solution into the weakest in the gas phase. © 2005 Wiley-VCH Verlag GmbH & Co. KGaA.
