Selectivity characterization of lipases for interesterification with a model chiral triglyceride

摘要
The selectivity of different lipases have been previously tested in the hydrolysis reaction of model chiral triglycerides. Here we are reporting the study of the catalytic behaviour in the interesterification reaction of two liposes showing special hydrolytic activities. Carica papaya and Candida antartica SP4351 lipases (respectively sn3 stereoselective and short chain typoselective through hydrolysis) ore studied in interesterification using a simple and effective system which allows to follow acyl exchanges. This system consists in opposing a chiral triglyceride (1-butyroyl 2-stearoyl 3-palmitoyl sn glycerol) to trimyristin. Both lipases ore displaying the some selectivities previously observed in hydrolysis.
