摘要
Die Protonen-Kernspinresonanzspektroskopie (1H-NMR) wird in der Lebensmittelanalytik in den letzten Jahren vor allem im Hinblick auf die Entwicklung innovativer, schneller und ressourcensparender Methoden immer häufiger eingesetzt. Im folgenden Artikel werden 1H-NMR Applikationen zur Prüfung der Authentizität und der quantitativen Bestimmung von Inhaltsstoffen bei Fruchtsaft, Wein und Energydrinks vorgestellt.
