Identification of Pedada Fibers by Fourier Transform Infrared Spectrophotometer (FTIR)

摘要
Dietary fiber is a plant substance that is not digested by human digestive enzymes. Dietary fiber is essential for humans, because it can prevent colon cancer. There are various sources of food fiber, one of which is a Pedada fruit (Sonneratia caseolaris), which contains about 64% of dietary fiber. In the absence of relevant information, the functional groups in the fruit flour were determined by Fourier Transform Infrared (FTIR) spectroscopy. The results showed that the functional groups of PFF have OH- and C-H stretching on wavenumbers 3427 and 2927 cm(-1), while the COO- group on wave numbers 1625-1709 cm(-1), and the group of R-O-R and C-C cyclic on wavenumbers 1090 and 1242 cm(-1). The results showed the presence of compounds pectin, cellulose, hemicellulose, and lignin, and will be useful in understanding the behaviours of the fruit flour in food systems.
